In addition to being our behind the scenes wonder woman at Hot Air Expeditions, she is also our resident baker! Stephanie is constantly whipping up delicious treats and sharing with our team, which are gone within minutes.
Today Stephanie is sharing one of her (and our!) favorite Fall recipes, Chocolate Chip Pumpkin Muffins! Trust us, you won’t regret baking (and devouring!) this tried + true treat.
Chocolate Chip Pumpkin Muffins Recipe
1 2/3 cups all purpose flour
¾ cup sugar
1 Tbsp pumpkin pie spice
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
2 eggs, beaten
1 cup pumpkin
½ cup butter (melted)
1 cup chocolate chips
In large bowl mix flour, sugar, baking soda, pumpkin pie spice, baking powder and salt.
In a separate bowl combine eggs, pumpkin and butter. Stir in chocolate chips and mix with dry ingredients.
Spoon batter into greased mini muffin cups.
Bake at 350° for 20-25 minutes.
Remove from oven and allow to cool for 5-10 minutes.
